Someone gave me a great recipe for chicken breasts, and it's simple too! It's supposed to be cooked on the grill, but I cooked it in the oven, and it was still very good. This is for a single serving:
1/2 chicken breast
1 slice of a pepper (any color)
one pineapple slice
1 or 2 tablespoons barbecue sauce (35 cal. for one, 70 cal. for 2)
place the chicken breast on a large piece of tin foil. Put the pepper slice and pineapple slices on top, and pour the barbecue sauce on top. Fold and seal the foil packet tightly, and place on grill until chicken is cooked. Depending on the thickness of the chicken, the cooking time will be around 30 minutes.
It's simple, tasty, and no messy clean up!!!
