Great low-cal breakfast


So, Chris has been bugging me all weekend to blog. "Our readers demand new content," he yelled passionately. Meanwhile, he hasn't posted anything other than pictures or videos in days. Oh well...
So here is our favorite diet food breakfast. You get a plateful of food for 200 calories. Its an omelette with mushrooms and cheese!!
Here's the recipe:
3/4 cup of Eggbeater (it's equivalent to 3 large eggs)
2 slices of Kraft fat free american cheese
6 ounces of mushrooms
Pam cooking spray
I Can't Believe It's Not Butter spray butter
Spray small frying pan with Pam. Sautee mushrooms with a little bit of spray butter until they reach desired tenderness. Coat larger frying pan with Pam and pour Eggbeaters into frying pan. Cover and cook over low heat until egg is cooked. Spoon mushrooms ontop of egg and lay cheese slices over egg. Fold egg in half and continue to cook on low until cheese melted - about 1 minute. Transfer to plate and enjoy with some fresh fruit!

Hi Katie,

I'll share my favorite dinner recipe with you guys. It makes it easy to be on a diet with this one. It's my version of chicken cacciatore.

In a skillet fry up peppers, onions (mushrooms if you like) with Pam cooking spray. Add 6 oz of chicken breast and salt and pepper to taste. Once the ckicken is cooked add a large can of tomatoes with basil and oregano. Serve over rice or pasta although I eat it right out of the pan. :o) On weight watchers it's only 3 points (not including the pasta) because all the veggies are free. I also put a little grated parmesean on top. Hope you like it!
